Farm Info

Finca El Edén, owned by Rodrigo Sanchez, is located in the Samaria district of Palestina at 1,500 MASL. The farm’s ideal climate, with over 8 hours of sunlight and annual rainfall between 1,800–2,000mm, supports cultivating high-quality varieties like Pink Bourbon and Purple Caturra. Harvests occur year-round, with peak seasons in October–December and a secondary harvest in May–June.

Processing Method

  • Selection: Cherries are floated to remove impurities and evaluated for Brix levels.
  • Micro-organism Cultivation: Lactobacillus and Saccharomyces cerevisiae are selected and cultivated separately before inoculating each microlot.
  • Mother Culture Preparation: A blend of micro-organisms with red fruit juices and liquor.
  • Fermentation: Cherries ferment for 190 hours with the mother culture blend.
  • Finalization: Brix levels are maintained above 6 and pH above 4 to enhance fruit notes while preserving the coffee’s natural profile.
