Farm Info
El Puente Mill, built in 2018, is a central processing facility in the Palestina region of Huila, Colombia. Named after a nearby footbridge, it serves over 100 small-scale farming families who deliver their coffee cherries for processing. Designed to handle larger volumes than individual farm mills, El Puente enables producers with limited resources to sell their coffee at premium prices, even before processing.
The project, led by renowned coffee expert Elkin Guzman, focuses on supporting farmers with limited infrastructure, motivating them to produce high-quality coffee while reducing processing risks. This initiative has significantly improved the livelihoods of local producers.
Processing Method
- Selection: Cherries are floated to remove impurities and evaluated for Brix levels.
- Fermentation: If Brix levels are low, cherries ferment in sacks for 12–24 hours.
- Drying: Cherries with optimal Brix levels or post-fermentation are sun-dried.
